Cook time: 20 minutes
Serves: 2–3
Ingredients
For the chicken:
2 lbs chicken thighs (or breasts)
2 tbsp olive oil
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
½ tsp allspice
½ tsp thyme
Salt & pepper to taste
For the mango lime glaze:
½ cup mango juice (or blended mango)
3 tbsp honey
2 tbsp lime juice
1 tbsp brown sugar
1 tsp soy sauce
Small piece of scotch bonnet (optional, for heat)
For the fresh salsa:
1 ripe mango (diced)
½ red bell pepper (diced)
¼ red onion (finely chopped)
2 tbsp chopped cilantro
Juice of ½ lime
Pinch of salt
Method
Heat olive oil in a skillet over medium heat.
Season the chicken with garlic powder, onion powder, paprika, thyme, allspice, salt, and pepper.
Place chicken in the pan and cook for 5–6 minutes per side until golden and cooked through. Remove and set aside.
In a small saucepan, combine mango juice, honey, lime juice, brown sugar, soy sauce, and scotch bonnet. Simmer for 5–7 minutes until slightly thickened.
