No Sugar Pumpkin Chia Pudding

Creamy pumpkin, cinnamon, raisins, sliced almonds and pumpkin seeds come together in this easy, no-added-sugar chia pudding.

Serves: 1 generous bowl

Chilling time: 1½ hours

Ingredients

1 scant ¼ cup chia seeds

1 cup plant-based milk

3 tablespoons cooked pumpkin purée

½ teaspoon cinnamon

½ teaspoon vanilla essence

A very light sprinkle of sea salt

A small handful of raisins

A small sprinkle of pumpkin seeds

A small sprinkle of sliced almonds

Method

Add the chia seeds and plant-based milk to a bowl or jar. Stir in the pumpkin purée, cinnamon, vanilla essence and sea salt until the pumpkin is evenly distributed.

Add the raisins, pumpkin seeds and sliced almonds. Stir the mixture thoroughly so that the chia seeds do not settle or form clumps.

Cover and refrigerate for approximately 1½ hours.

Once thickened, give the pudding a final stir. If it is firmer than desired, add a small splash of plant-based milk.

Serve chilled.

This recipe contains no added sugar; its gentle sweetness comes naturally from the pumpkin and raisins. For the best result, choose an unsweetened plant-based milk if you want to preserve the no-added-sugar quality.
